Singaporean rice recipe, just like your mom cooked in perfect Pakistani style. Singaporean Rice is the perfect dish for those who want to try something different than the traditional Pulao or Biryani Rice. An Ideal course to impress your guests at family and friends gatherings and dinners. It has got everything from chicken chunks to vegetable to noodles and delicious mayonnaise sauce.
- Chicken ½ kg boneless cut into small cubes
- Salt 2 tsp
- Black pepper 2 tsp
- Crushed red pepper 1 tsp
- Egg 1
- Flour 2 tbsp heaped
- Corn flour 3 tbsp
- Baking powder ½ tsp
- Capsicum 2 cut into small cubes
- Cabbage 1 cup cut in small cubes
- Onion 2 cut into small cubes
- Carrot 2 chopped and boiled
- Vinegar 3 tbsp
- Soya sauce 1 tbsp
- Chili garlic sauce 1 tbsp
- Ketchup 6 tbsp
- Mayonnaise 6 tbsp
- Pinch of orange color
- Rice 1/2 kg
- Garlic 4 Cloves
- Green Chilies 10
- Cumin 1 tsp
- Spaghetti 1 pack boiled
Vegetables and Spaghetti: Put spaghetti in boiling water and cook with 1/2 tbsp salt for 8 minutes then drain and keep aside. All the vegetables must be cut into small sized cubes and then cooked in 2 tbsp oil with 1/2 tsp salt, 1/2 tsp pepper, 1 tbsp soya sauce, 2 tbsp ketchup, 1 tbsp vinegar and 1 tbsp chili garlic sauce. Add 1 pack boiled spaghetti to the mix, stir well and keep aside.
Rice: Take a little oil in a pot and add 1 tsp cumin and stir a little. Add 1/2 kg Rice with 2 tbsp salt and water (one inch above the rice). Cook on low flame ( dum ) until done. It will take almost 15 minutes.
Sauce: Mix Ketchup 4 tbsp, Mayonnaise 6 tbsp, Vinegar 2 tbsp and a pinch of orange color. Chop Garlic and green chilies 10 cut into halves and deep fry.
Chicken: Marinate chicken with 1tsp salt, 1 tsp black pepper, 1 tsp crushed red pepper, 1 egg, 2 tbsp flour, 3 tbsp corn flour, ½ tsp baking powder for 30 minutes. Deep fry the chicken cubes.
In a large platter put rice, top with prepared sauce, then vegetable mixture, fried chicken, top with fried garlic and chilies, serve immediately.
Tip: Reheat the whole dish in microwave for a minute so that all the layers are heated evenly.
